docs: fix the REPOSITORY_AVATAR_FALLBACK_IMAGE default (#569)

The cheat sheet lists `/img/repo_default.png` as the `REPOSITORY_AVATAR_FALLBACK_IMAGE` default, but public files moved under `/assets` in Gitea 1.15 (https://github.com/go-gitea/gitea/pull/15219), so that path 404s. Like `app.example.ini` in https://github.com/go-gitea/gitea/pull/39514, document the default as empty, falling back to Gitea's builtin repository avatar, and note that a custom value is used as-is without the sub-path.
