docs: drop the gc.reflogExpire default (#584)

Gitea no longer sets `gc.reflogExpire`, leaving reflog expiry to git's defaults, see https://github.com/go-gitea/gitea/pull/39703, backported in https://github.com/go-gitea/gitea/pull/39711.
